I Feel the Magic

I'm sure I'll receive more lucrative gifts this holiday season. But nothing will compare to the box of Magic Cookies Bars my mom made me and had delivered Priority Mail this week (time was of the essence!). If you've never had them before then you must whip up a batch before Santa gets here. Mom uses sliced almonds for the "nuts" component. And per my near-psychotic dislike of coconut, she leaves that out entirely. (Sorry, Terence!) There's something about the combination of salty-buttery graham cracker crumbs with the sweet condensed milk and semisweet chocolate that just has to be tasted to believe. I'd love to be home for the holidays this year. But this special treat from Mom makes me feel like I almost am.

INGREDIENTS
1/2 cup butter or margarine
1 1/2 cups graham cracker crumbs
1 (14 ounce) can EAGLE BRAND Sweetened Condensed Milk (NOT evaporated milk)
1 (12 ounce) package semisweet chocolate morsels
1 1/3 cups flaked coconut
1 cup chopped nuts

DIRECTIONS
Preheat oven to 350 degrees F (325 degrees for glass dish). In 13x9-inch baking pan, melt margarine in oven. Sprinkle crumbs over butter; pour EAGLE BRAND evenly over crumbs. Layer evenly with remaining ingredients; press down firmly.
Bake 25 minutes or until lightly browned. Cool. Chill if desired. Cut into bars. Store loosely covered at room temperature.

Down here in the South, we call them "Hello, Dollys". But we do it with the coconut AND butterscotch chips as well as the chocolate chips.

Coconut is fruit of the Gods...fresh and not sugared are very different, fresh is soooooo good.

I am making these bare this weekend.
