For some reason, When Will I be Loved popped into my head when I read your question. She had so many I liked but that is the one that immediately came to mind.
It's not the popular choice - as she had bigger hits, but most of those were covers - but i've always been a fan of "Heart Like a Wheel"
I love her! It's tough to pick just one. I remember Willin being so iconic among her fans back in the 70's. Desperado and Blue Bayou are staples. But I'll go with her breakthrough hit You're No Good.

"Blue Bayou" and "When Will I Be Loved"
I bought her greatest hits CD two weeks ago and there's something about It's So Easy and Just One Look that is infectious, puts-me-in-a-really-good mood. The way she interprets the songs. Same goes for When Will I be Loved. #oldsoulhere
"You're No Good" is what popped into my head.
I was surprised when I ripped all my old CDs to find a) how much I liked her music on a relisten, b) how many hits she had, and c) how many of her hits were cover songs. But the cover version was usually BETTER than the original.

Didn't she sing "Desperado" before the Eagles. Of , course there is the album with Emmylou Harris et al. Time stamp Blue Bayou !
I was never a big fan of her's but "When Will I Be Loved" popped into mind first.
I liked her "Blue Bayou" until I heard Roy Orbison's version, which struck me as deeper and more touching than Linda's.
I feel so bad about her illness. I heard her say in an interview that since she didn't write as much original stuff as other artists, her royalties are sadly comparatively modest.
